We will be usingGlutious Rice Flourfor the Chocolate Mochi Cake.
Glutinous rice flour,也被称为糯米粉或甜米饭flour, is derived from glutinous rice, which is a type of rice that contains more amylopectin than other rice varieties. This higher amylopectin content is responsible for the sticky and chewy texture that sets glutinous rice apart from regular long-grain rice.
One of the main reasons forglutinous rice flour‘s popularity is its versatility in both sweet and savory applications.
In desserts, it acts as a binding agent and imparts that signature chewy texture to various delicacies.
Sticky rice dumplings, sweet rice cakes, and popular treats like mochi all owe their delightful consistency to this enchanting flour. It is also gluten-free, which makes it an excellent alternative for those that have a gluten allergy.
